Humanity at the Table: How Robotics, Automation, and Artificial Intelligence are Reshaping Restaurant Operations and Global Franchising

The restaurant industry is entering one of the most transformative periods in its history. Driven by advances in artificial intelligence (AI), machine learning (ML), robotics, and automation technologies, restaurants are redefining operational efficiency, customer engagement, food preparation, supply chain management, and global franchising strategies. While automation offers opportunities to improve consistency, reduce operational costs, and enhance scalability, it does not eliminate the need for human creativity, emotional intelligence, and leadership. This editorial examines how robotics and automation are reshaping restaurant operations and strengthening global franchising systems while emphasizing that customer service excellence, menu innovation, healthy dining experiences, and strategic leadership remain fundamentally human endeavors. The article discusses the implications of these technological transformations for higher education, highlighting the urgent need to prepare future leaders who can effectively collaborate with intelligent technologies while maintaining the human-centered values that define hospitality.
